The Story of Hawaiian Bill and A Man Named Charlie

Many Hawaiian Moonlights ago, Charles (Charlie) Ka'anoi a native of the Islands was a Hawaiian Paniolo (cowboy) you would find riding the valleys of Molokai and Oahu, getting together with his fellow Paniolos for some friendly kau kau (food) and music.

When Charlie settled down in Honolulu, he continued this tradition of "getting together" with family and friends. Over time, he was asked to hold Luaus all over the island and became known as the Luau Man of Hawaii. At a Ka'anoi Luau you would most likely find -such items as raw island crab, potato-macaroni salad and other Hawaiian specialties.

For Charlie and his crew, having a Luau became a labor of love because most of the dishes required special ingredients that are often difficult to obtain. The recipes he used were traditional Ka'anoi family recipes passed on through generations.

Charlie gifted his love of family, food and fun on to his son Bill who as a young boy went along to the Luaus where he used to be the official "gopher and taster". When Bill moved to the desert he not only brought the Spirit of Aloha, but also his love of cooking and entertaining. Like his father Charlie, he's always looking for fresh and authentic Hawaiian ingredients to entice the palate of locals and visitors alike.

All of us at "Hawaiian Bill's Pau Hana Grill" are honored to have you as our guest and consider you our "Ohana" (family), in the Charlie Ka'anoi tradition. He is proudly remembered each time we see his smiling face as the center of the official Hawaiian Bill's seal.
